The Milwaukee Marriott Downtown has announced its chef and a name change for the restaurant, due to open sometime in July at 323 E. Wisconsin Ave.

The new chef is Texas native Patrick Taylor (below), and the restaurant will be called Millioke - Meat, Cheese and Beer, instead of the original name, Milwaukee Cafe & Bar, to reflect a greater emphasis on craft beers.

A preview of the restaurant's menu shows dishes such as beer cheese fondue ($8) and a trio of spreads ($12, choice of hummus, tapenade, pimento cheese, braunschweiger and duck liver mousse) among the appetizers; skirt steak salad ($14); smoked sausage and cheese flatbread ($10); turkey burger with sunflower sprouts and avocado ($10); and pan-seared walleye with coleslaw and lemon-caper brown butter ($24), eggplant Napoleon ($16) and salmon with barley risotto and mustard sauce ($24) among entrees.

The restaurant also will serve cheese and sausage plates, from state producers including Carr Valley, Nordic Creamery, Usinger's, Bolzano and Underground Meats.
